Suman is a sweet sticky rice dessert made from glutinous rice cooked in coconut milk and usually wrapped in banana leaves or buli palms. There are two traditional ways to serve suman; one is sprinkled with sugar and the other is to pour coconut caramel sauce (latik in Tagalog) over it. There’s one that’s my dad’s favourite which is served with fresh mango, though I think it doesn’t originate from the Philippines, but it’s surprisingly refreshing.
